NEW PRODUCTS: Other products that we are eager to find a home for and have been researching and working on for a good few years now are: Langoustine / Lobster / Prawn / Crab Terrine: A wonderfully flavored additive or stand alone to/with any meal from Soup to pasta this terrine will surely be a undoubted success in all seafood dishes. Essentially the Raw terrine is processed through extraction, this ensures that the only liquid (which makes up the terrine) is pure extract, this gives a pure powerful flavour of Lobster / langoustine / prawn / Crab. The extraction is done in our factory in Humansdorp, whose main product is the supply of lobster/crayfish and prawns, fresh and frozen, for the export market with the SABS and MCM requirements. Further details can be given on request. The extract is highly concentrated in the frozen block form with a moisture content of approx. 50-60% at the present method of extraction, with added anti-oxidant. It is envisaged for use as a seafood stock cube, similar to a beef stock cube for flavouring in bisques, rice dishes, stir-fries, as an additive to enhance staple foods such as maize meal etc. The extract has a definite flavour of lobster or prawns and is not fishy-tasting. It is also envisaged for use in a dehydrated form for high protein/energy meals to the army as in “k-rations packs”: for use by hikers or mountaineers or even military personal as high protein and energy rations: for supply to world food feeding schemes. In dehydrated form the extract can be re-constituted in hot water and poured over rice or maize-meal as a high protein/energy additive and flavour enhancer. In powder form it can be used in soups, gravies and in stir-fries. Other applications could be in flavoring of potato crisps, also in deep fry shrimp chips.
Chitin / Chitosan: Although still under research this proves to be a up and coming product for us, essentially Chitosan is a natural product derived from chitin, a polysaccharide found in the exoskeleton of shellfish like shrimp or crabs. While it has been in existence for millennia, its current form has just recently been prepared. Technically speaking, Chitosan is a naturally occurring substance that is chemically similar to cellulose which is a plant fiber. Like plant fibers, Chitosan possesses many of the some properties as fiber, however unlike plant fiber, it has the ability to significantly bind fat, acting like a "fat sponge" in the digestive tract.
